What type of pasta for this dish?
While Spaghetti is a classic choice for this tomato sauce dish, several other pasta options would pair well. Linguine is a slightly thicker spaghetti noodle option. Fettuccine is a ribbon-like pasta (wider than linguine) and holds up well in this rich tomato sauce. Bucatini is similar to spaghetti but thicker and has a hollow center, allowing it to absorb more sauce in each strand. If you are looking for a shorter type of pasta, rigatoni is a short noodle with a hollow center that holds sauce well making each bit flavorful. How to prepare the Greenshell Mussels?
To thaw, remove the mussels from the original packaging, place them in a plastic bag or on a covered tray, and refrigerate for 5-8 hours. Once thawed, for this dish, specifically cook the mussels in the skillet with the sauce for a few minutes until heated through.
Ingredients
- 1 package of spaghetti (16 ounces)
- 4lbs of Half-Shell Greenshell Mussels
- 2 tablespoons of olive oil
- 4 garlic cloves (finely chopped)
- 1 onion (finely chopped)
- 1 can of diced tomatoes or 5 fresh ripe tomatoes (chopped)
- 1/2 cup dry white wine
- 1 teaspoon sugar (optional, to balance acidity)
- Salt and pepper to taste
- 1/2 teaspoon red chili flakes (optional, for a kick)
- Fresh parsley (chopped) for garnish
- Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil; cook spaghetti in boiling water until nearly al dente, 6 to 8 minutes. Drain.
- Heat olive oil in a large pan over medium heat. Add the chopped garlic and onion, sauté until fragrant and softened for about 3-4 minutes.
- Stir in the diced tomatoes (or fresh tomatoes if using) and white wine. Simmer for 10 minutes, allowing the flavors to meld together. Season with salt, pepper, and chili flakes if you like a little heat.
- Add the Greenshell Mussels to the sauce, cover the pan with a lid, and cook for 5-7 minutes.
- Add the cooked spaghetti into the pan, mixing it well with the mussels and tomato sauce. If the sauce seems too thick, add a splash of reserved pasta water to loosen it up.
